WINEMAKING:
The grapes are grown in a 35 years old vineyard. The wine is constituted by 90% Sangioyese and 10°% Cabernet Sauvignon. The wine-making was performed by a prolonged fermentation at controlled temperature. The Cabernet Sauvignon fraction ages for about 20/24 months in French barriques (new). The Sangiovese in medium size Slavoman oaks. The two wines are assembled and a further refinement of 3 months in barriques (used) takes place. Then the wine is ready to be bottled for a final refinement for at least 12-18 months in the bottles.

TASTING NOTES:
Colour: Intense ruby red with garnet reflexes.

Smell: Vinous and slightly fruited, with light vanilla aroma and oak notes.

Taste: Soft and velvety, full-bodied, slightly tannic. We suggest you to serve the wine in wide and rounded crystal glasses in order to appreciate the harmonious bouquet and at a temperature around 18-20°C. A good companion roast meats, game, tuscan appetizers.
