Wine-making

In the wine-making process the wine is stored in
steel vats for 20/25 days. During these 25 days,
we change the vats and taste the wine several times.
In this way we control the temperature and the course
of the wine-making. After 25 days we draw the wine
from the vats.

The
Vino Rosso di Montalcino is stored in oak wine butts
for six months and put on the market one year after
the vintage. The wine Brunello di Montalcino is
cellared at least two years in oak wine butts and
four months in bottles. This wine is put on the
market five years after the grape-harvest. The Riserva
di Brunello is only made in excellent years. We
use the same ageing process as for the Brunello
wine, but the wine is refined in butts for twentyfour
months and cellared in bottles for another six months.
The wine is put on the market six years after the
vintage.

"La Fornace"
in Montalcino (Siena), is a small family-run farm of
rural origin. They produce small quantity of Brunello
di Montalcino DOCG, Vino Rosso di Montalcino DOC and,
during the best years, Riserva di Brunello DOCG.
Grappa di Brunello is produced by the distillation of
marcs. Besides the wines they produce also extra virgin
olive oil DOP Terre di Siena.
Every product is treated with the best care, a knowledge
coming from direct experience and a passion that renews
from generation to generation.

Florence's region continues
to advance its position as the nation's most dynamic
producer of premium wines, following decades of
turning out popular Chianti in straw-covered flasks.
Tuscany's modern renaissance in wine began in Chianti,
in the central hills around Siena and Florence,
but it rapidly spread to take in the strip along
the Mediterranean coast that was not previously
noted for vineyards.
Much of the progress has come with classical reds
based on the native Sangiovese vine, Chianti, Brunello
di Montalcino, Vino Nobile di Montepulciano and
Carmignano, all DOCG. But growing success with other
reds (especially the stylish non-DOC wines known
as "Super Tuscans") has been augmented
by new styles of whites to enhance the region's
reputation. |
