A complex and fruity red. Full-body, nice
bouquet, very fruity. Best served at a temperature
of 18-20° with roast, meats, aged cheese.

Corvina veronese produces a bright red wine,
with a marked taste of red cherry. It is a grape
that is perfectly adapt to bear the long drying
process which characterizes Amarone.
Rondinella produces a bright red wine, with a
clear suggestions of cherry and berry fruits,
with firm acidity.
Molinara produces a light wine, pink, fruity and
of medium durability. It is recommended for the
production of vintage Valpolicella Classico. The
flavor, structure, complexity, and longevity of
wines made from the Cabernet Sauvignon grape are
what makes it so popular.

JACOPO AMIGONI
(1480- 1556) |
"The
story of Venus and Adonis, which has attracted not
only artists but poets, including Shakespeare, tells
that Adonis was the offspring of the incestuous
union of King Cinyras of Paphos, in Cyprus, with
his daughter Myrrha. His beauty was a byword. Venus
conceived a helpless passion for him as a result
of a chance graze she received from Cupid's arrow."

Jacopo Amigoni (Amiconi) was a Venetian history
and portrait painter who worked all over Europe
in a more or less international style, the Venetian
Rococo, with elements compounded from Sebastiano
Ricci and French Rococo, and, later, Tiepolo.
He worked for some years for the Elector of Bavaria
and then came to London in 1730, where he painted
several decorative cycles (e.g. Rickmansworth, near
London, Moor Park Golf Club) and portraits; though
these, according to Vertue, were 'not his inclination
- nor Talent'.
In 1739 he returned to Venice with a small fortune,
and it was he who persuaded Canaletto to visit London
(1746). In 1747 he went to Madrid as Court painter:
Vertue records that news of his death there reached
London just as his finest works - in St James's
Square - were destroyed. The altarpiece of Emmanuel
Collection, Cambridge, is his; other works are in
Darmstadt, London, Madrid, Venice and York.

server, if you are not happy with their
answer, ask for a manager or another employee
who knows the list or buys the wines. Chances
are there will be someone on hand to offer

'Passo' is
the product of a precise grape-producing and wine-making
project, whose aim has been the full exploitation
of the climate and technical potentialities.
It owns the structure of Amarone through Corvina Gentile,
that gives the wine power and sobriety; a small addition
of Cabernet Sauvignon grants the wine persistence,
whereas a small percentage of Merlot makes this wine
complete in its softness.
The grapes are collected into 15-20 kg. boxes and
then left wilting in dry and airy rooms until late
November. During this period the grapes start the
same process of dehydratation and impollination taking
place during the production of Amarone.
The result is a powerful but elegant wine with a special
and pleasant character.

Dried cherries, licorice and prunes
dominate the nose; on the palate this is sweet,
rich and chewy. An elegant red. Enjoy it with roasts
and flavorful dishes. It is also an exceptional
meditation wine.

"1998 Passo - This dry red
exhibits a deep plum/ruby color as well as a gorgeous
bouquet of cherry liqueur intermixed with smoke,
underbrush, fudge, and spice. Super-rich, full-bodied,
heady, and seductive, this knock-out effort came
in under 14% alcohol. The innovative 1998 Passo
includes Corvina and Rondinela grapes that have
been dried for one month, a la Recioto, then blended
with 15% Cabernet Sauvignon and 5% Merlot. The latter
two grapes are given malolactic in French oak before
being blended with the Corvina and Rondinela. Drink
it over the next 5-6 years." |

Corvina Veronese is a late ripening
Italian variety for red wines. This variety
is the most important ingredient in Valpolicella
and Bardolino. The wines are soft and light
and have seldom much colour or tannin. The
wines are however fruity and perfumed with
cherrry and floral aromas.
Controlling yields is important. Corvina with
its thick skins is succesfully used for drying
to make recioto and amarone wines because
the thick skins protect the grapes from rot
while they shrivel.
